Beer Batter Onion Rings

several large onions, peeled
1 cup flour
1 cup beer, any brand you like since there will be some left for the cook to drink
3-4 cups shortning or oil for frying
3 tablespoons sugar
3 teaspoons salt

Combine flour and beer in a large bowl, blend thoroughly.  Cover and allow to sit at room temperature for 3 hours or more.  Genlty stir in sugar and salt.

Cut onions into 1/4" slices and separate into rings.  Heat shortning to 375 degrees F.  Pat rings dry with a towel and dip into batter.  Fry until golden brown.  Add more flour or beer to make batter thicker or thinner depending on your preference.
